Brew using water temperature above 95c, we have found that it can even tolerate 100c--boiling temperature—and still produce flavorful liquor without astringency. To maximize re-steep potential, however, 95-97c is ideal. Three gram per 100ml, brewed for sixty to ninety seconds will impart a full body to the tea. Enjoy!
